Pineapple is the splurge in this glass, so the portion is deliberate: a third of a cup buys the tropical flavor and keeps the net carbs around ten grams.
Light coconut milk carries it. Full-fat works too if you have the calories to spend; it just turns the smoothie into more of a meal.
This is number 5 of our top 20 high protein, low carb smoothies.
method
Pour the coconut milk and water into the blender, add the pineapple and protein powder.
Add the ice. Blend on high for 30 to 45 seconds, until completely smooth.
Taste and adjust: a few more ice cubes for thicker, a splash more liquid for thinner. Drink cold.
chef's tips
- Frozen pineapple is already cut, always ripe, and makes the smoothie colder. No reason to use fresh.
- Toasted coconut flakes on top cost almost nothing in carbs and make it feel like a real treat.
- Use a protein powder with no added sugar. It is the difference between 3 and 15 grams of carbs per scoop.
