Ingredients
- 3 large eggs
 - 2 tbsp milk
 - 1/2 cup fresh spinach, roughly chopped
 - 1/4 cup cherry tomatoes, halved
 - 2 tbsp feta cheese, crumbled
 - 1 tbsp olive oil
 - 1/4 tsp dried oregano
 - Salt and pepper to taste
 
Instructions
- Whisk eggs, milk, salt, and pepper in a bowl
 - Heat olive oil in an oven-safe small skillet over medium heat
 - Add spinach and cook until slightly wilted, about 30 seconds
 - Add tomatoes and cook for another 30 seconds
 - Pour in egg mixture and sprinkle with feta and oregano
 - Cook until edges are set but center is still slightly runny, about 3-4 minutes
 - Place under broiler for 2 minutes until top is golden and center is set
