- 4 salmon fillets
 - 2 large zucchinis
 - 1 tablespoon olive oil
 - 1 lemon, juiced
 - Salt and pepper to taste
 - Fresh herbs for garnish (dill, parsley)
 
Instructions:
- Start by seasoning the salmon fillets with salt, pepper, and a squeeze of lemon juice. Let them marinate for a few minutes.
 - Heat olive oil in a pan over medium-high heat. Once hot, place the salmon fillets skin-side down. Cook for about 4-5 minutes until the skin is crispy.
 - Carefully flip the salmon and cook for an additional 3-4 minutes, or until the salmon is cooked to your desired level of doneness.
 - While the salmon is cooking, use a spiralizer to create zucchini noodles (zoodles) from the zucchinis.
 - In another pan, quickly sauté the zoodles in a small amount of olive oil for 2-3 minutes, just until they are tender but still have a bit of crunch.
 - Plate the zoodles and top each serving with a seared salmon fillet.
