No oven, no water bath, no cracking anxiety. This is the no-bake cheesecake Nigella Lawson became internet-famous for: cream cheese and most of a large jar of Nutella, set in the fridge over a biscuit base.
It is unapologetically indulgent, which is the point. Make it the day before; the overnight chill is what gives you clean, dense slices.
This dish is one of our top 10 recipes that made Nigella Lawson famous.
method
Blitz the biscuits to crumbs in a food processor, then add the butter and the tablespoon of Nutella and pulse until it clumps.
Press firmly into the base of a 23 cm springform tin and chill while you make the filling.
Beat the cream cheese and icing sugar until smooth, then beat in the Nutella until even and glossy.
Spread the filling over the base, smooth the top, and scatter with the toasted hazelnuts.
Chill for at least 4 hours, ideally overnight. Release from the tin and slice with a hot knife.
chef's tips
- Room-temperature cream cheese or you will chase lumps forever.
- Toast the hazelnuts in a dry pan until golden; raw ones taste like packaging.
- Dip the knife in hot water and wipe between cuts for clean slices.
