  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 2 tomatoes, diced
  • 1/2 tsp saffron threads
  • 1 tsp smoked paprika
  • 300g (1 1/2 cups) paella rice or short-grain rice
  • 1 liter (4 cups) chicken or vegetable broth
  • 200g (7 oz) green beans, trimmed
  • 200g (7 oz) rabbit or chicken, cut into pieces (optional)
  • 200g (7 oz) seafood mix (shrimps, mussels, clams)
  • Salt and pepper, to taste
  • Lemon wedges, for serving
  • Fresh parsley, chopped, for garnish


  1. Prepare the Ingredients: Heat olive oil in a large paella pan or large skillet over medium heat. Add onion, garlic, and bell pepper, cooking until softened.
  2. Add the Tomatoes and Spices: Stir in the tomatoes, saffron, and smoked paprika. Cook for a few minutes until the tomatoes are softened.
  3. Incorporate the Rice: Add the rice to the pan, stirring to coat it with the mixture. Cook for 2-3 minutes.
  4. Add the Broth: Pour in the broth and bring to a simmer. Season with salt and pepper. Spread the rice evenly across the pan and do not stir after this point.
  5. Add Protein: If using, add the rabbit or chicken, pressing into the rice. Let it cook for about 15 minutes.
  6. Add Seafood and Beans: Place the green beans and seafood mix on top. Cook for another 10-15 minutes, until the seafood is cooked and the rice is tender.
  7. Rest the Paella: Remove from heat and cover with a tea towel. Let it sit for 10 minutes.

Serving Recommendation

Serve the paella warm directly from the pan. Garnish with fresh parsley and accompany with lemon wedges. Paella is best enjoyed family-style, allowing everyone to scoop their serving straight from the pan.
