Ingredients (2 servings)

  • 2 arepas (Colombian corn cakes)
  • 4 large eggs
  • Bacon (optional)
  • 2 tablespoons olive oil
  • 1/2 cup quesito (Colombian cheese) or Mozzarella
  • 1 tablespoon of butter
  • Salt, to taste

1. Make the Arepas:

  1. Heat a pan over high heat.
  2. Place the arepas in the pan and cook them for about 5 minutes on each side or until they are golden brown and crispy on the outside. Once cooked, keep them warm.
  3. Add a tablespoon of butter in the end.

  1. Place your pan on high heat.
  2. Add olive oil and butter.
  3. Add your eggs with a pinch of salt.
  4. Slowly scramble until it becomes creamy, but not firm. Be careful not to overcook the eggs.

  1. Place the arepa with butter, quesitto, and scrambled eggs on the plate.
  2. Serve the arepas immediately while they're warm and the eggs are soft and fluffy.
